As an example of audio editing I have replaced the audio track of a short clip of the Animation movie Ratatouille. what I want to show case is the audio that I have created but obviously the video is also displayed. Am I infringing copyright?

Do you intend to sell it? That counts against you. And you could be well within your rights and still receive an C&D from the owner. Hollywood studios tend to take a very narrow view of fair use.
If you are only using a short clip and do not intend to use it for anything other than creative expression, then I do not believe you are infringing.
